I know, mashed potatoes are a silly thing to post a recipe for since everybody knows how to make them. But so what? I had some potatoes getting old, so I wanted to use them, and I was impressed with how these turned out.
5 medium baking potatoes
1/2 - 2 cups soy milk
1/2 stick soy margarine, sliced
4 cloves garlic, minced
Onion powder, dill weed, Lawry seasoned salt, and fresh ground pepper to taste
1. Scrub potatoes until they are cleaner than clean. Boil them in a large pot with plenty of water for about 30 minutes or until they are hella soft.
2. Drain the potatoes (some people save the potato liquid, I refused to bother) and return to big pot.
3. Smash potatoes up. Go nuts, fool. Put pot on medium heat. While stirring/mashing, add a small amount of soy milk. Continue to stir and add soy milk until you get the desired consistency.
5. Add soy margarine and mix as it melts.
6. Add garlic and seasonings and mix. Taste and add seasonings as necessary.
