This is a good way to sneak raw vegetables into your diet.
3 mushrooms, chopped
1 carrot, chopped
1 celery stalk, chopped
1-2 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp dijon mustard
salt and pepper to taste
Throw everything in a blender and blend until smooth. Use as a dip, dressing, or spread.
