2 cups flour
1 tsp baking powder
1 tsp baking soda
2 1/2 cups soy milk
3 tbsp oil
Sift dry ingredients, add soy milk and oil and mix until just mixed (do not overmix). Pour 3/4 cup of batter onto a well-sprayed/oiled/nonstick griddle/frying pan preheated over medium heat and cover. Cook until it bubbles in the center, flip, cover, cook until the other side has a nice color. Put pancake on a heat-resistant
plate in the oven at 170 degrees Fahrenheitand repeat process until batter is done.
Feeds 2-4 weirdlets depending on how hungry you are.
