3 or 4 tablespoons soy margarine
About 1/4 cup whole wheat flour (or unbleached white)
1-4 cups plain lowfat or regular-fat soy milk (I used Westsoy Plain 1%)
Vegan sausage links, precooked and diced
Salt & pepper
2 or 3 cloves garlic, minced
1 medium onion, diced
In a saucepan, melt the margarine. Add the flour slowly and stir until a paste develops. Slowly (very slowly) add a little soy milk, continually stirring. As you stir, the heat should help thicken the gravy. As the gravy gets too thick, add more soy milk. Continue until you get the desired consistency.
Add in the sausage link pieces, salt, pepper, garlic, and onion. You may wish to cook the onion first, or just let it get soft in the gravy. Continue to stir and heat until it is cooked enough for your liking. You will probably want to add even more salt & pepper before eating.
Serve over biscuits or toast, or over white rice. You can substitute cooked TVP for the vegan sausage links to make vegan "shit on a shingle".
