1 tbsp vegetable oil
1 tbsp flour
unsweetened unflavored soymilk
mild curry powder
1/2 small onion, diced
1 cup frozen spinach
sea salt
1 12-oz package Mori-Nu silken tofu, firm or extra-firm, cubed
Heat oil in a frying pan over medium-high heat. Add flour and stir to make a roux. Slowly add soymilk, stirring constantly, as mixture thickens. Cook and stir and add soymilk until you achieve a slightly pasty consistency. Add onion and sprinkle some curry powder. Add spinach and salt and stir. Add cubed tofu, stir, and cover. Simmer until everything is warm. Serve over jasmine rice.
