2 8 oz. tubs Tofutti Better Than Cream Cheese (plain)
2 tbsp soy milk
1 cup Turb./natural sugar (I guess succanat would work as well)
1 tsp vanilla extract
2 tsp grated lime peel (I used a key lime)
4 tbsp lime juice (I used the key lime from the grated lime peel and a couple of regular limes)
2 tbsp arrowroot powder (or cornstarch)
1 9-in. graham cracker crust (I use the Keebler Fat Free crust...the only one I could find without honey)
Preheat oven to 350 degrees. Dump cream cheese, soymilk, sugar, vanilla, grated lime peel, lime juice and arrowroot in a large bowl and beat with a fork until smooth. Pour mixture into graham cracker crust, place on baking sheet and bake for 40 minutes. Let cool, refrigerate overnight. The Keebler crust comes with a handy lid.
Makes about 8 slices, depending on what kind of pig you are.
